Looking for new dishes to make for that loved one? Trying to find something different that will not take hours to prepare? Here are a couple of unique healthy dinners which will look fabulous and taste fantastic.

Poached Egg Salad Nicoise

If a unique flavor is what’s desired? Try this on for size. If properly prepared and laid out on a plate, this dish is a work of art. Not only will it be put on anyone’s easy meals list, but it will be asked for again after the first time.

6 oz. Green beans

Two 5 oz. Tuna steaks

2 large tomatoes (sliced)

chives (snipped).

2 large Eggs

1 (oz). Capers

2 (oz). Black olives Vinaigrette salad dressing

Cook the beans drain and let stand. Place eggs into boiling water and cook for three minutes. Remove shell after rinsing under cold water. While the eggs and beans are cooking griddle the tuna, which takes 3 to 4 minutes on each side. Once everything is done, lay the fish on a bed of tomato slices and green beans. Sprinkle over the capers, olives and chives. Pour the vinaigrette lightly over the top of tuna with the egg parted in the center.

This is a unique way to make an appealing meal with a little effort the look will impress even the hungriest person.

Coconut Prawn Noodles

400grams of stir fry pan noodles 4 tablespoons of Thai curry paste 1 Tablespoon of vegetable oil 22 oz. Stir fry vegetables (this is approximate) 10oz peeled prawns (frozen or fresh) 6 tablespoons of coconut cream 2 tablespoons of chopped coriander (cilantro).

Cook noodles by the packet info. Drain with cold water and repeat. In a large pan heat curry paste in light oil adding the vegetables, stir fry for 3-5 minutes. Add the prawns and cook for another 3-4 minutes until the shrimp turn pink. Pour in coconut cream and simmer for 3 minutes. Add noodles and cilantro and stir well under medium flame.

Quick Spanish Paella

This dish only takes about 30 minutes or less to prepare and serve. This rice entree is a seafood variation which everyone will love and will be another easy meals project that anyone can make.

8 oz pack mixed frozen shellfish

1 pack of 7 oz. Coriander and herb flavored rice

9 oz. Glass of white wine and

18 oz. water

1 onion (chopped)

1 garlic clove (crushed) ½ green paper (no seeds) ½ red pepper (no seeds) small amount of fresh coriander for topping.

Heat the oil in large frying pan. Add in the rice, onion, garlic and peppers. Cook quickly for 1-2 minutes. Pour in the wine and water, cover and cook for 7-8 minutes. Toss in the shellfish and cook for at least 3-5 minutes or until the liquid has been absorbed in the pan. Serve hot and garnish with coriander.
